Potatoes with stuffed chicken breast wrapped in pancetta

So this week's first recipe is potatoes from my vegetable box with stuffed chicken breast wrapped in pancetta. The inspiration comes from here:

I used feta (φἐτα) cheese instead of gorgonzola cheese and didn't really bother with the green beans..

Preheat the oven to 200C/400F/Gas 6.

Cut potatoes and put in oven.

Cut chicken breasts in half and spread one tablespoon of cranberry sauce over each chicken breast.

Place a piece of feta in the middle of each chicken breast, season and roll up the chicken to enclose the cheese.
Add slices of pancetta and tightly wrap around the chicken. After cooking the potatoes for 30 minutes, place the chicken breasts on the baking tray, drizzle with a little olive oil and cook in the oven for about 20-25 minutes until the cheese is melted.
After 25 minutes...
yummmy!


Add a salad and there you go!

week 1

So, my vegetable box arrived Friday morning. Let's see what was delivered...



So what I've got are: 1 red cabbage, 1 pumpkin, 2 courgettes, 2 onions, 1 celeriac (which I have to admit.. I had to ask my boyfriend what it's called..), 3 tomatoes, 1kg potatoes and 3 lovely looking carrots.

As inspiration flows in.. so will the recipes I've been cooking with all the above!

my vegetables

In an effort to be healthier, happier and also make my life more challenging.. every Friday morning a vegetable box apperas on my doorstep full of seasonal vegetables looking forward to becoming the main ingredients in one of my recipes.

I find myself using the internet a lot when looking for recipes, so this blog is an attempt to show the vegetables in season and to share some of the recipes I've found and used to make a little bit of seasonal magic.
